Blackberries with Sweet Almond Cashew Cream

Ingredients
- 1 cup cashews
- 3 tablespoons maple syrup
- 1/4 -1/2 cup unsweetened vanilla almond milk
- 2 tablespoons lemon juice
- Pinch of salt
- 1/2 teaspoon vanilla extract
- Blackberries or other fresh fruit of your choice

Instructions
- Place cashews in a medium bowl, cover with hot water and soak for 30 minutes.
- Drain cashews. Add cashews to a food processor along with the rest of the ingredients, except berries. Blend together until smooth.
- Serve berries with cream.
- Store cream in a jar in the refrigerator up to 3-4 days.
