Barbara’s Simple Chicken Curry

Ingredients
- 2 lbs. boneless, skinless chicken breast
- 1 onion chopped
- 1 tbsp. curry powder
- 1 tsp. garlic powder
- 1/2 cup water
- 2 tbsp. raisins
- 2 tbsp. whole almonds
- 1/2 cup half and half
- 2 tbsp. roasted cashews

Instructions
- Slice chicken into small pieces that are 1/4″- 1/2″ thick.
- Spray large skillet with canola oil and add onion. Cook and stir over medium heat for 3-5 minutes until soft.
- Add the chicken and continue to cook for another 5 minutes.
- Sprinkle garlic powder and curry powder over the chicken and add the water. Cover and continue to cook for another 10-15 minutes until chicken is cooked through.
- Add raisins, almonds, cashews (if using) and half and half. Cook on medium high for 2-3 minutes until sauce slightly thickens.
- Barbara suggests serving this over brown rice, a veggies and / or a side salad.
