Chocolate Cake – Just One Slice
I was so lucky as five of my seven nieces and nephews came for visits this summer.
I usually pick out recipes ahead of time to cook with them. Stevie Ray and Daniel love broccoli, watermelon and chocolate. The boys enjoyed “baking” in a cup but what they really loved more was eating it by candlelight. (The Auntie Chere Special!)



This recipe (from Eggland’s Best) is absolutely perfect if you are craving chocolate. But it also could be the most dangerous recipe in the world. Why? Because it only takes 5 minutes to make day or night. Guess you will have to see for yourself, hey!
Ingredients
2 tablespoons Flour
3 tablespoons Sugar
2 tablespoons Unsweetened Cocoa
1 large Eggland’s Best egg
2 tablespoons Milk
2 tablespoons Vegetable Oil
2 tablespoons Chocolate Chips
Small splash of Vanilla Extract
Preparation
Add dry ingredients to mug and mix well.
Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips and vanilla extract and mix again.
Put the mug in the microwave and cook on high for 2 minutes. The cake may rise over the top of the mug, but don’t be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
Yield: 1 to 2 servings
