Cinco De Mayo 5 Ingredient Fajitas

My favorite part of summer is family dining on the deck. This recipe is easy, quick, healthy and our family favorite!

  • 1 package (about 1 pound) skinless chicken breasts, sliced into strips
  • 3 peppers, seeded and sliced into strips
  • (I used 2 green and 1 red)
  • 2 onions, peeled and sliced into small wedges
  • 1 package (1.5 oz) Taco seasoning mix
  • Vegetable spray

About 4 hours ahead of your dinner hour place chicken strips in a re-closable bag or glass covered dish and sprinkle about 3/4 of the taco seasoning package over the chicken. Refrigerate. Place peppers and onions in a re-closable bag or glass covered dish and sprinkle the remaining taco seasoning over the veggies. Refrigerate.

Over medium heat, spray two non-stick fry pans with vegetable spray. Stir fry chicken in one pan until golden brown, about 15 minutes. Saute the peppers and onions in the other pan about 12 minutes.

Serve in whole wheat tortillas, with taco fixings. We used refried beans, tomatoes, romaine lettuce, shredded cheese, sour cream, and chopped cilantro. Serve with fresh fruit. (We served cantaloupe and watermelon) And don’t forget the warm conversation.
