Idea for your NO Cook Day Southwestern Chili Soup
I have many coaching clients who want to eat healthy but don’t want to cook. Imagine that!
This flavor filled recipe is perfect for your healthy no cook day. The bonus…all of these ingredients can be found in a healthfully stocked pantry. Stock your pantry with black and white canned beans, chicken base, canned tomatoes and canned green chilies. Stock your freezer with chicken breasts that are just waiting to be cooked up.
Why the name chili soup? I call this soup because it is the consistency of soup but every time I plop beans in my crock pot I think chili. Gosh I could not live healthy or happy without my crockpot! Life is easy and we make it hard and that includes cooking and eating!
- Saute in 1 Tbsp. olive oil
- 2 chicken breasts, cubed
- 1 onion, chopped
- 3 cloves garlic, or to taste
- 15 oz can white beans, rinsed and drained
- 1 15 oz can black beans, rinsed and drained
- 1 28 oz can crushed tomatoes*
- 1 4 oz can mild green chilies, diced
- 1 tsp. cumin
- 2 tsp. chili powder or to taste
- 1 tbsp. chicken base or to taste
- 2 cups water **
Combine all ingredients in crock pot. Cook on medium heat for about 4 to 6 hours.
Serve with cilantro, sour cream and shredded cheddar cheese and warm conversation.
*Canned whole tomatoes or tomatoes in your freezer from your garden are also fabulous
** You can use two cups of chicken broth or a can of chicken broth
On New Year’s Day I served this to Gary and Brett. I agree with Brett the chicken should be more shredded and bite sized. I cut the chicken in bigger chunks in case someone wanted to “pick” them out and eat more vegetarian. Life is easy and we make it hard!
