Metal skewers

I prefer metal to bamboo because as the metal gets hot it helps the meat cook from the inside out without drying out. The downside is if you want to keep them brand spanking new I soak them for a while after dinner and then scrub with an SOS pad! A little work but worth it as my metal skewers are over 25 years old and look like new.

Bamboo skewers

They need to be soaked for 30 minutes before you use them. They are really convenient for big gatherings or busy workdays. Many cooks use aluminum foil under the exposed bamboo as the wood tends to burn even if it soaked.

If you are going to grill lots of kabobs, soak a big batch of skewers and freeze them. Pull them out of your freezer when you need them. My favorite use for bamboo skewers is to skewer chunks of angel food cake and strawberries. It is my go to easy dessert idea for boat rides.
