Spinach Tortellini Soup
This recipe helped my husband lose 20 pounds a few years ago and keep it off. Why? Hot foods make you feel full and we always ate a soup, salad and then our dinner. This quick recipe has ingredients you can keep on hand. And, if you are watching your weight, use only 2 or 3 tortellini in your soup bowl and add more spinach. The entire 6 ounce bag of spinach is only 70 calories.
2 – 14Π ounce cans of chicken broth or chicken stock of your choice
5 ounces or one half of a 10-ounce package of cheese tortellini
2 cups spinach
2 or 3 scallions, sliced
Cayenne pepper to taste
In a medium saucepan bring broth to a boil. Add the tortellini and cook according to the package directions. Stir in the spinach and scallions. Cook only until the spinach wilts, about 2 minutes. Season with cayenne pepper or Cajun seasonings.
