Sherry loves this super simple recipe! It is quick and easy and comes together easily just in time for spending less time in the kitchen. Perfect for spring when we just want to be outside and the hot days of glorious summer! What is best? This dish is fresh, healthy and delish too. No one really notices how healthy it is because this dish is so beautiful and tasty! You gotta love that!

Instructions
  1. Cook the quinoa in the water with a pinch of salt until done, about 20 minutes, then leave covered while you prep the rest.
  2. Toss all ingredients together and serve or refrigerate for 2 hours or up to overnight.

Sherry Coleman Collins, MS, RDN, LD

Sherry Coleman Collins is a metro-Atlanta-based registered dietitian nutritionist. Sherry is passionate about helping overcome the divide between fact and fiction when it comes to nutrition and making the delicious bite the healthy bite. She has spoken at dozens of conferences across the country on the topic of food allergies, one of her areas of expertise. 

As a consultant for the National Peanut Board, Sherry spearheads the Board’s efforts to provide reliable and science-based information about peanuts, including peanut allergies.  She develops and delivers food allergy education for consumers and training for professionals in foodservice, school nutrition, and nutrition. Sherry is married to Mr. Peanut RD and they have one little peanut of their own, in addition to a furry beast.

I love to cook and I love to travel. My husband and my son are my two favorite people and I have the most fun with them! We try to live a life that is filled with adventure.

What is your empowering belief that gets you back in motion again?

That God has a plan for my life. I really truly believe that he has a plan for each of us and that it’s my most important job to find out what it is and do it. When I feel discouraged or overwhelmed, I just go back to that fact and start again. I believe that his plan for me is to love him and love others. When I’m doing that, everything else is extra. 

What did you have to let go of or accomplish to get you to where you are today?

I’ve had to let go of the desire to do it all. There’s just not enough time to be everything or do everything at one time. Instead, I’m learning to focus on doing the things that I can do now and trusting that there will be time for the rest later. And if there’s not, then it wasn’t meant for me to do it and that’s okay.

What is your theme for the year and why? 

I always picture a word. This year’s word is “Count” — as in, count every day and make every day count. There are so few days in a life, really, and we don’t ever know how many we will get. So, I’m being really intentional about the things I do and the people I do them with. I don’t want to waste a minute on anything that doesn’t really count!
