Flourless Peanut Butter/Almond Butter Cookies
Ingredients

nut butter
1
egg
1
cup
sugar
1
teaspoon
vanilla
Pinch of salt
(Optional: dried fruit
nuts, chocolate chips)
Instructions
Combine the egg and sugar; then stir in the vanilla and nut butter.
Mix in any optional ingredients.
The dough may be sticky so you may want to refrigerate it for 5-10 minutes.
Roll the dough into 1” balls, then roll in sugar and place on parchment paper on a cookie sheet.
Flatten with a criss-cross pattern made with a fork as with peanut butter cookies or with the bottom of a glass.
Bake at 375°F for 8-10 minutes.
Cool for several minutes on the cookie sheet until firm.
