Chere’s note: Amanda, thanks for writing about your dad and you. Brett lived with us while he studied for his four CPA exams and now I have a new appreciation for CPA after anyone’s name. And I thought the RD exam was challenging. Brett started at Deloitte in Chicago in August. Not sure what he loves more, the “Chicago life” or his new job.

August 17th the Hoffman family lives changed forever. On that day three generations of their family were killed. Michelle Hoffman, her 8-year-old daughter, Julia, and 5-year-old son, Jason, were riding in a minivan with Hoffman’s mother-in-law, Marta Stoffers. A pick up track crashed head on into their vehicle killing Michelle, Julia and Marta. Jason was critically injured.

Michelle and her husband Michael decided two years ago to move their family of six to Oman, on the Arabian Sea. They taught and worked at the American International School of Muscat. This accident happened days before the family was to return overseas for another year. They started a blog with the tagline, “An everyday American family seeking worldwide adventures.” 

Live well, live today,
for it is a gift.

It is so easy to forget that each and every day is truly a gift that we have been given. We wake up to a day full of emails, people, tasks and stuff. It seems the world wants us to move faster and live faster.  Since Gary’s dad was dying last summer and Gary had his knee accident and sat on the couch for six weeks I have lived more in the moment. When Gary says, “Let’s go to Buffalo Wild Wings to watch the Packer game,” I say yes instead of “I’m too busy.” We think tomorrow I will be less busy tomorrow.  But will you?

Live well - live today, for it is a gift.

The most amazing thing is that when I truly live in the moment I actually get more done. When I value the present moment I have better relationships. The more I like me the more others seem to like me. Isn’t that interesting!

Today is a gift. Embrace it with joy and anticipation - realize the possibilities. It beckons you towards your destination in life.

Be at peace - you are exactly where you were meant to be at this moment. God has carefully chosen the people, events, joys and challenges on your path today. The things you encounter are stepping stones of what is to come. Make the most of today.

Focus on "the present" - you will see and appreciate things you might otherwise miss. 

Follow your heart - search it to find your purpose in life and you will find meaning and happiness. Use your talents, do your best, contribute. Make a difference, because you can. Be passionate about your journey - sing, dance, laugh, and love as you go. Give praise and allow time for prayer. The promise of tomorrow brings with the endeavors of today. Do not let the fast-forward pace of the world deprive you from savoring "the now." Seek things that fill you with love and bring you joy. Have faith, it fosters hope - it makes the difference. Believe with God all things are possible.

This Chicken Basil Salad from the 5 Ingredients for Healthy Living Cookbook is perfect if you are looking for a quick lunch or meal to serve your guests. I have whipped this up for everyone that popped in for lunch this summer. It’s great for car trips too. For Gary’s birthday we kayaked in Minocqua, Wisconsin and ate this salad lakeside. It takes longer to spell Supercalifragilisticexpialidocious (was my favorite word) than making this tasty high protein salad. Give it a try. I buy the chicken at Costco so this recipe takes about 5 minutes.

  • 12 oz. leftover chicken, shredded
  • 1/4 c. olive oil
  • 2 T. lemon juice
  • 3 green onions, minced, (use any onions you have)
  • 1/2 c fresh basil, chopped
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper

Combine oil, lemon juice, green onions, basil, salt and pepper in a large bowl and mix well. Add chicken and toss to thoroughly coat. Serve on mixed greens or whole grain bread or gluten free bread. Makes six servings.

Nutrition: 167 Calories; 15 gm Protein; 11 gm Fat, 1.5 gm Carbohyrate; 231 mg Sodium

Nothing like lunch on the deck on a hot summer day!! Nothing beats 5 minute meal prep so you can enjoy your company and not spend time in the kitchen.

Where is Chere savoring life?

Savoring is a quality that happy people naturally have in abundance.

Savoring = to mindfully engage in thoughts or behaviors that heighten the effect of positive events on positive feelings. There are 3 temporal forms of Savoring: (1) Anticipatory (2) In the Moment and (3) Reminiscent. We can savor a positive event before it happens by getting excited in preparation for it, we can savor the positive event as it event as it occurs and we can savor a positive event by remembering it. What are you savoring today?
