“Too damn funny…I already do three of the 5 things I COULD do in September. I eat the Kashi Go Lean Crunch and keep telling other people about it…have contributed to the Gulf coast people and have done the cell phone thing. No wonder we're such pals…we even think alike. Of course now I will start eating organic apples! I won't put up get well cards though…when you live alone in a town house (of course there is Marky) your house doesn't get dirty…Great e-zine. Love, Marn”

“Hi, friend. I want to tell you I love getting your newsletter. It reminds of who I am and what I am doing here at work and in school. I'm making the right choices even though I am VERY busy.

I just got back from a quick trip to Seattle to attend the wedding of my childhood friend's daughter. It would have been so easy to say it's too difficult to get away from work (a very busy time in the school year) and that I should be in Winona when my son is honored for his football career.

It was a great I got to refresh my friendship with Jerry and remember how special our friendship is to both of us plus I have a new friend (Jerry’s wife) and enjoyed all that Seattle has to offer. I done good, and all my animals survived!”

Cynthia, a working woman under construction.

“A life without JOY and passion is like a hot fudge sundae without the hot fudge, for sure no whipped cream and for sure no maraschino cherry on the top.”

Healthy Pepperoni-Less Pizza

Everyone in my house loves pizza. Try this version that pleases everyone — kids because it still tastes like pepperoni pizza, mom because it is much lower in fat using ground turkey, dad because it is heartier than most pizzas with a higher protein content and it is a quick dinner fix. I buy several pounds of skinless ground turkey and cook them, rinse them and freeze in one pound packages.

  • 1 pound ground turkey, cooked, rinsed for 3 minutes in hot water and drained (rinsing drastically decreases your fat content)
  • 1 26-ounce jar spaghetti sauce
  • 3 – 4 tablespoons pizza seasoning (I love www.penzeys.com)
  • 1 pizza crust (I love Betty Crocker Pizza Crust Mix, Simply Add Water – reminds me of mom)
  • Handful of pepperoni slices, about 10 slices (for flavor)
  • Mushrooms, onions, green peppers – any healthy veggies you love on your pizza
  • Mozzarella Cheese, shredded

Combine ground turkey, spaghetti sauce and pizza seasoning. Cook over medium heat to blend flavors about 15 minutes. Use one-half recipe for this pizza and freeze or use the other half for your next pizza.

Prepare pizza crust according to package directions.

Layer ground turkey/sauce mixture on your favorite crust. Scatter a few pepperoni on top of turkey sauce for flavor. Top with your favorite vegetable toppings. Sprinkle shredded cheese over pizza. Bake according to package directions.

Serve with a tossed salad with low fat dressing.

I think about what I am going to write for several weeks before I actually sit down at my computer and pour out my thoughts. (I call it percolating!) I had the October ezine all written and ready to go!! I had it all planned…AND then my friend’s 43 year old sister, Diana, passed away unexpectedly on Sept 30th! She was totally “tasting life,” and, as the priest said during the homily, “grabbing life,” as she was a pilot and photographer. She was in Hibbing, MN to photograph a wedding the next day. I don’t think Diana planned on dying.

During this same time, I not only had a friend’s VISA card (mixed up at the restaurant), but had been using it (to Gary’s dismay); two friends had lost their jobs; a friend got cancer; a client inherited 4 children ages 2 – 7 (ahh…life’s list goes on and on), and I am truly concerned about a family member's health! I juggled my schedule to “fit” it all in.

You can spend a lifetime working and planning for “how it will be” and miss all the good stuff (JOY) in between. If you keep one eye on the future and worry about what it will bring and one eye on the past, how much time will you have for the present? Yes, life is full of juggling. Juggling to fit it all in. Can you ever fit it all in? You can choose to juggle your joy as I have. You can enter your joy-zone every moment and from that zone, do whatever it is you are going to do — with JOY!

You can make a choice right now, the minute you are reading this — To wait for joy, that “someday JOY,” or make a choice right now to juggle your joy every single day. Life is short — make it sweet! Juggle Your Joy!
