Jane McGinty’s Watermelon Salad

Jane is a friend of mine and a great cook.
Watermelon combined with fresh mint from the garden screams summer! Can’t you picture eating this on your deck having warm conversation with people you love most.
- 1 Bambino personal watermelon (Jane buys the pink ribbon label to support breast cancer and her company, CH Robinson)
- 1 package of Atheno feta cheese
- ½ cup of fresh mint
- ½ cup of either red wine vinegar or balsamic (Jan likes the flavor of the vinegar but look of balsamic)
Optional: 1 sweet white onion sliced into thin, small strips
