Fussy Eaters: KARE 11 Segment
Earlier this week, I was given the opportunity to appear on KARE 11 a Minneapolis based news show to share some ideas on how to make menu planning super easy, and super delicious for busy families.
For this appearance I focused on vegetarian, gluten free and lactose free foods for busy people. You can watch the segment too!
Have trouble getting enough veggies? You are in luck. Check out Garden Lites Souffles. They are gluten free and vegetarian and have 2 full servings of veggies in each one and are all less than 200 calories. Check out my favorite the Pizza Souffle which would be a hearty snack or a light lunch with a piece of fruit. In Minneapolis they are available at Target and Walmart. Check them out.

Eating out can be a nightmare when trying to find a place to please everyone. Look for somewhere that can customize so everyone is happy. If you are on the run and need something vegetarian or gluten free, you are in luck! Qdoba can customize your order.
Qdoba makes everything fresh in front of you so it’s easy to get what you want. There’s something for everyone whether your diet is gluten free, vegetarian, or dairy free–or maybe even all three! Check out websites ahead of time to look at nutrition info as well as allergens if there are certain things you need to avoid. My favorite is the Craft 2 menu you can pick two perfectly sized smaller menu options and together they have 600 calories or less.
Have lactose intolerance? Watch for hidden lactose when you are dining out where you wouldn’t think of it: omelets, scrambled eggs, mashed potatoes, or cream sauces. Cook with lactose free milk for entire family–it won’t hurt anyone to have lactose free milk in dishes. It tastes the same and no one will know the difference.

Remember life is easy and we make it hard!
