Easy Peasy Gluten Free Biscuits By Jessica Lyman

Jessica’s number one value is her health. She has eliminated gluten, sugar, and all processed foods from her diet. Her body responded with weight loss, energy and amazing lab values. She has to be healthy as she embarks on traveling around the world for the next five years. Go Jessica!!!

Gluten free can be simple and delicious as evidenced by these biscuits Jess has perfected! This week I baked them for my dinner club…verdict..they loved them. You will too.

  • 8 eggs
  • ½ cup butter or coconut oil
  • 2 T sweetener  (Stevia and Splenda)
  • ½ tsp salt
  • 2/3 sifted coconut flour – no need to sift the flour
  • 1 tsp. baking powder aluminum free

Preheat oven to 375.  Blend all ingredients, mixing well. Line a baking pan with parchment and drop by spoonful. Or grease pan with coconut oil with a paper towel.Bake for 15 minutes until lightly brown.

 Some Notes: Amazing! Jessica uses ½ of Splenda and Stevia. You can buy coconut flour at your local food coop. You can use regular baking powder. Really no need to sift flour.  Just make sure there are no clumps.
