Chicken Basil Salad

Nothing like lunch on the deck on a hot summer day!! Nothing beats 5 minute meal prep so you can enjoy your company and not spend time in the kitchen.

I met Deb Brand my freshman year at UW Stout. I lost her for 20+ years and about ten years ago found her in Cub. I was looking at her sparkly black jacket and was going to tell her I liked it. She looked up at me and started screaming, “Chere!” We found each other. I never go to Cub on Saturdays and it was the first time ever she shopped that Cub. Our husbands had to wait over an hour watching us talk and that’s a whole ‘nother story!    Law of Attraction!

This Chicken Basil Salad from the 5 Ingredients for Healthy Living Cookbook is perfect if you are looking for a quick lunch or meal to serve your guests. I have whipped this up for everyone that popped in for lunch this summer. It’s great for car trips too.  For Gary’s birthday we kayaked in Minocqua, Wisconsin  and ate this salad lakeside. It takes longer to spell Supercalifragilisticexpialidocious (was my favorite word) than making this tasty high protein salad. Give it a try. I buy the chicken at Costco so this recipe takes about 5 minutes.

  • 12 oz. leftover chicken, shredded
  • ¼ c. olive oil
  • 2 T. lemon juice
  • 3 green onions, minced,  (use any onions you have)
  • ½ c fresh basil, chopped
  • ¼ tsp. salt
  • ¼ tsp. black pepper

Combine oil, lemon juice, green onions, basil, salt and pepper in a large bowl and mix well. Add chicken and toss to thoroughly coat. Serve on mixed greens or whole grain bread or gluten free bread. Makes six servings.
