Angela’s Green Bean, Chickpea & Sun-Dried Tomato Salad with Feta & Olives

This month I want to highlight Angela Manderfeld, MS, RDN, LD, CDE, the zesty owner of Healthy Solutions with Angela. As a Registered Dietitian Nutritionist and Certified Diabetes Educator, she loves working with very busy people to find simple ways to boost their energy, health and wellness.

Today I’m sharing Angela’s Green Bean, Chickpea, & Sun-Dried Tomato Salad with Feta & Olives recipe. She loves this versatile dish because it can be eaten as a main dish or a side dish and can be eaten hot or cold! She wants you to know it travels well as she has packed it on many of her flights from Anchorage, Alaska. She also wants you to know besides bursting with flavor, it is high in fiber and packed with vitamins and nutrients—as a dietitian she “had” to tell you that.

Simple and fresh way to prep your green beans with a little orange zest and thyme!

Instructions
  1. Heat an inch of water in a large skillet and cook green beans until tender, about 5 minutes. Drain. Set aside. Wipe skillet dry and melt butter over medium heat. Add orange zest, thyme, salt and pepper, then add beans, stirring to combine. Continue cooking until hot. Adjust seasonings according to your own taste. Makes four servings.

My philosophy is, when you feed your body what it needs, it will perform optimally for you. I teach people to eat mindfully, rather than following diets, counting calories and measuring every morsel. Mindful eating allows you to trust your body to guide you and gives you more time to participate in life.

How do you savor and enjoy your life?

angela manderfield healthy solutions with angela familyI savor every minute I have with my family, I particularly love traveling with my family and going on Alaskan adventures. After having to work a full-time job that often required travel away from them, I am so grateful to be around them and experiencing life with them! The best part about this is now I am able to continue the work I love without it taking me away from my family.

What is your empowering belief that gets you back in motion again?

Life is to short, so choose happiness, because it’s a decision. The other thing I have struggled with is coming to the realization that you don’t have to make everyone else happy and you can’t no matter how hard you try.

What did you have to let go of or accomplish to get you to where you are today?

I had to let go of fear and limiting beliefs. I often thought, I could never do private practice, I could never make enough money to help support my family. But where there is a will there is a way, I discovered virtual telehealth and found that was the answer to all of my dreams. Now I am able to be home with my little guy and do what I love, helping people live higher quality lives, from the comfort of my home.

What is your theme for the year and why?

My theme for the year is controlled chaos. I quit my full-time job to do my private practice. My focus is spending time with my family and working with clients who want to have fun and see results! I am in transition and focusing on doing things that bring joy and satisfaction to my life.

What is on your bucket list?

I love to run, I have completed 7 marathons and would like to do a few more before I’m 50. I just turned 40 this past year and in the next 5 years my goal is to run a sub 4 hour marathon in Kauai or somewhere else that is warm!
