Rosemary Roasted Sweet Potatoes

From the 5 Ingredients for Healthy Living Cookbook

  • 2 lbs sweet potatoes, scrubbed, sliced
  • 3 cloves garlic, chopped
  • 1 Tbsp fresh rosemary, chopped
  • 2 Tbsp. olive oil
  • 2 Tbsp. pine nuts

Preheat oven to 375F. Combine sweet potatoes, garlic, rosemary and olive oil in shallow roasting pan, tossing well to coat. Bake 45 to 50 minutes, turning potatoes halfway through cooking time. Sprinkle with salt, pepper and pine nuts before serving. Makes 6 servings

How do Potatoes Compare with Potato Chips?

It is no coincidence that February is Potato Lovers month and American Heart Month.

Only a few other foods are as wholesome as a potato.  Not only does it contain complex carbohydrates, but it also supplies protein and many vitamins and minerals.

Americans consume 129 pounds annually; far more than any other vegetable. Simply, by the amount of potatoes we consume, it is the leading source of Vitamin C in the American diet.

Nutritionally speaking, the less you do to a potato, the better.  The skin is an excellent source of fiber.  One 3 ounce potato provides 4 grams of fiber. So, if you do peel your potato do so carefully and remove the thinnest layer of skin possible.

An average small potato provides 109 calories, 1/5 of Vitamin B 6, 1/4 of the Vitamin C and 1/10th of the iron we require each day.  It is also a source of magnesium and potassium. Potatoes are a huge source of potassium which can reduce your risk for heart disease. Consuming potatoes can also reduce the risk of high blood pressure.
