Shrimp Salad from the 5 Ingredients for Healthy Living Cookbook

Need a quick, impressive and healthy lunch for company? Look no farther. Those impressive shrimp speak elegance. This recipe took about 10 minutes to chop the veggies. The evening before, cut up the veggies and thaw your shrimp in your fridge.  An hour before serving toss the salad together. What’s not to love!

Shrimp will boost your intake of zinc and selenium, two minerals you need for activation of enzymes. Zinc supports your immune system while selenium is needed for healthy muscle metabolism.

 

  • 1/4 C plain Greek yogurt
  • 1/8 tsp. salt
  • 1/8 tsp. black pepper
  • 1 ½ tsp. Old Bay Seafood Seasoning Blend
  • 1 red bell pepper, seeded and chopped
  • 1 cup, celery, chopped
  • 1 pound medium cooked shrimp, peeled

Combine yogurt, salt, pepper and Old Bay Seasoning in a large bowl and stir to blend. Add red pepper, celery and shrimp, tossing to combine. Adjust seasonings to your taste. Arrange on lettuce leaves if desired. Makes four servings
