Prosciutto Wrapped Asparagus

Want and easy, elegant and make ahead veggie dish? And, if you love bacon and want to eat more veggies this recipe is for you. The prosciutto gets crispy like bacon and the asparagus gets soft and tender. Best, it takes about five minutes to prepare. I made this for Easter and my company loved it. Even Gary! And he is not a big asparagus fan. I have found if I put bacon or prosciutto on any food he will eat it. Gotta love that!

1 pound asparagus, medium thickness (about 16 to 18 spears)

½ pound prosciutto

1 Tbsp. olive oil

Line a jelly roll pan with aluminum foil. Heat your oven to 450°F. Cut off bottom of asparagus spears. Wrap a slice of prosciutto around the middle of each spear.  Place the wrapped spears on the prepared jelly roll pan.  Drizzle the olive oil over the wrapped spears. Bake for 5 to 10 minutes and turn the asparagus over. Bake for another 5 minutes or until the asparagus is tender. They usually take about 15 minutes max. Serve immediately with your favorite entrée.
