Merry Christmas Salad
This easy, elegant salad adds festivity to your holiday dinner and screams Christmas. An added bonus it is rich in antioxidants. We love it with Pork Medallions in Cream Sauce or grass fed steaks.

- 1 bag or 2 bunches of spinach leaves
- 1 cup fresh raspberries
- ½ cup pomegranate seeds
- 1 small red onion, thinly sliced
- ½ cup roasted walnuts – Toast 10 minutes in a 350°oven (My family likes mixed nuts!)
On individual salad plates, arrange the spinach, fruit, onion and walnuts. Serve with Molly’s dressing.
Molly’s Balsamic Dijon Salad Dressing

You may want to double this recipe as my guests always ask for more.
- 1/3 cup olive oil
- 2 to 3 tablespoons balsamic vinegar
- 2 tsp. Dijon mustard
In a jar with a tight fitting lid, combine the dressing ingredients; Shake until dissolved. Serves four.
