Red, White and Blue Salad

I am always looking for easy quick fruit and veggie ideas for my family and the TASTE LIFE subscribers. We were having Gary and Lane Bendzick over to celebrate the 4th of July. I wanted a dish to celebrate the holiday and also wanted their comments on this unique combination. Gary Bendzick heard that I like recipes with 5 ingredients or less. He mentioned his favorite three ingredient recipe is watermelon, blueberries and grapes. Sounds good to me, Gary!

You can use any amounts of the ingredients—more watermelon or more blueberries. The amounts listed here are we made for the four of us.

  • Watermelon chunks, (2 one inch slices, chunked)
  • Blueberries, washed, drained, (1 cup)
  • Fresh mint, (about 9 stalks or ¸ cup chopped)
  • Fresh lime juice (1 lime)
  • Feta cheese, (1 ounce)

In a small serving bowl, combine watermelon, blueberries, fresh mint and lime juice.
Toss to coat. Garnish with feta cheese. Serve immediately.

We served this with spinach salad with strawberries, dried cranberries, blueberries and raspberry vinaigrette dressing; beer can chicken, coleslaw, baked beans, strawberry shortcake (everyone knows I always need a reason for whipped cream), and warm conversation.
