Microwaved Basic White Sauce and Cheese Sauce
It takes on average 7 to 10 times of trying a new food before you like it. Most people that I meet only eat three veggies that include peas, corn and beans. I have found this ten minute “sauce” helps turn non veggie eaters into veggie eaters. It is also great if you have an elderly person in your life who only wants to eat soft foods like noodles. The cheese sauce can perk up any food and gives an added protein boost.
Yield: 1 cup
- 2 tablespoons butter
- 2 tablespoons flour
- ½ teaspoon salt
- 1 cup milk
In one quart measure, place butter, flour and salt. Microwave on High for 2 minutes. Stir after 1 minute. Gradually whisk or stir in milk. (I use a whisk) Microwave on High for 3 ½ to 4 ½ minutes, stirring every minute until thick and bubbly.
Cheese Sauce: To finished sauce, add 1 cup (4 ounces) shredded sharp cheddar cheese. Microwave on High 1 to 2 minutes to melt cheese. You can add a dash of cayenne pepper for additional zest.
Dill Sauce: To finished sauce, add 2 teaspoons dill weed and 1 teaspoon lemon juice
Horseradish Sauce: To finished sauce, add 1 to 2 teaspoons cream style horseradish.
Curry Sauce: Add 2 to 3 teaspoons curry powder along with the flour. Microwave as above.
