Fast and Healthy Stir Fry Recipe

Brett loves stir fry and so every other week or so I try a new stir fry combination, trying to get the right blend of fast healthy flavors. The key is it must be quick and easy and the ingredients must be on hand. The secret ingredient that adds the punch is the hoisin sauce. You can replace the vegetables with your favorites like cauliflower or broccoli and use your favorite salad dressing. This recipe is adapted from www.kraftfoods.com Food and Family magazine. I like to do recipes that you cook once and eat twice. This week we had a pork loin roast on Sunday and used the leftover pork on Wednesday for this stir fry.

  • 1 teaspoon olive oil
  • 1 pound of boneless pork loin, cut into strips
  • 1/4 pound of green beans, ends trimmed off and kept whole
  • 5 carrots, sliced or mini carrots sliced in half lengthwise
  • 5 green onions, sliced diagonally
  • 2 Tbsp. hoisin sauce (found in Asian section of your grocery store)
  • 1/4 cup your favorite balsamic salad dressing

Heat the oil in a stir fry skillet on medium high heat. Add pork and carrots and beans.

Cook 5 minutes. Stir in dressing and hoisin sauce. Cook 7 minutes or until the carrots are tender. Add green onions. Cook 1 more minute.

Yield: 4 servings

Serve with brown rice, a tossed green salad and warm conversation.
