Gram Ady’s Spaghetti Chili
Everyone has their favorite chili recipe. And there seems to be a debate if chili has noodles in it or not. Growing up in Milwaukee, chili was ONLY meat, beans, celery and onions. If you put noodles in anything it was called casserole. In Minnesota when you put noodles in anything it’s called hot dish. Danielle adores Grandma Ady’s chili. She was out of town recently so we surprised her with Gram Ady’s chili when she came home.
1 pound ground beef
1 onion, diced
3/4 cup celery, diced
3/4 cup green pepper, diced
1 10.75 ounce can tomato soup
1 15 ounce can kidney beans, drained
1 46 ounce can tomato juice
Spaghetti noodles – circumference the size of a quarter
Chili powder to taste
Salt and pepper to taste
Brown the meat. Cook the celery, onion and green pepper in a few tablespoons water in the microwave until soft. Drain and add to meat. Add juice, soup and kidney beans. Simmer. Break spaghetti noodles into thirds and boil until tender. Add to chili. Season to taste with the chili powder, salt and pepper.
Serve with cut up fresh fruit and popovers!

Chere’s version: ground turkey, 3 stalks celery, 1 green pepper, whole wheat noodles and lots and lots of chili powder. Sauté ground turkey. Rinse and add the celery, green pepper and onion to sauté pan. Sauté until tender. Add the rest of the chili ingredients.

4 pounds of ground turkey
2 fry pans
4 quart size freezer bags
Purchase ground turkey when it is on sale. Sauté 2 pounds of ground turkey in each sauté pan on low until browned. Rinse for 3 minutes to reduce the fat. Date and label the freezer bags and package 1 pound of ground turkey per bag.
Use in your favorite recipes calling for ground beef – tacos, chili, spaghetti.

Just to let you know that I switched from ground round to extra lean ground turkey … and my picky family didn’t notice – as they used to in the past – so it’s a good reminder to try ‘changes’ again, the next time it might stick!
Actually, they ate it up heartier than before. My son was avoiding the ground beef in the spaghetti, but when i switched to ground turkey (and extra Italian seasoning to go with it) he hoovered it up (he’s a 12 year old hockey player). I go to SAMS Club to buy the Mega packs and freeze … thanks for reminding me how easy it is make some simple healthy changes!!
