5-INGREDIENT RECIPE OF THE MONTH

Roasted Sweet Potatoes With Rosemary.
– 3 sweet potatoes, peeled, and sliced into slices
– Π red onion, peeled, and sliced into thin slices
– 2 Tbsp. olive oil
– Fresh ground pepper and salt
– Fresh rosemary, few tablespoons chopped

Place sweet potatoes and onion in a 9″ by 13″ pan coated with nonstick cooking spray. Toss with 2 tablespoons of olive oil. Season with fresh cracked pepper and salt. Bake, uncovered in a 400¡ oven until lightly browned about 30 minutes depending on how thin you slice the potatoes. The last 5 minutes of baking toss with the fresh rosemary. Yield: 3 – 4 servings.
