Dairy Free Chocolate Avocado Pudding

I fell in love with avocadoes about thirty years ago and typically eat one a day. For breakfast I toss a half of one in my scrambled eggs, and at lunch or dinner I use the other half in my Greek salad.  It is perfect as an evening snack too with a little sprinkle of Celtic sea salt and keeps my blood sugar stable.

Dairy Free Chocolate Avocado Pudding is devilishly delicious!

 

Dairy Free Chocolate Avocado Pudding

2 ripe Hass Avocados
¼ cup dark unsweetened cocoa powder
½ cup raw honey
3 tablespoons raw almond butter

1 tablespoons natural vanilla extract
1/2 teaspoon ground cinnamon
1 pinch Celtic sea salt

Directions:
Place all the ingredients in a high-speed blender and puree until smooth. You may need to use your spatula and scrape the sides of the blender and pulse a few times. This mixture gets lusciously thick.
Spoon into glasses and chill for a couple of hours before serving. Makes 2 cups of pudding.
