Cauliflower Polonaise

Grandma Lily used to make cauliflower with breadcrumbs…gobs of breadcrumbs.  I remember trying to pick them all off and eating more breadcrumbs than cauliflower. Laurie and I took Gram’s recipe and  kicked up the flavor with a little marjoram which is a very popular herb, especially in the Mediterranean. It is an herb full of history as the Greeks used to make wreaths and garlands that were believed to be a symbol of peace, happiness and harmony. Gotta love that!

Laurie and I served this dish for our mom’s 83rd birthday
with roast beef and mashed potatoes that mom requested. We all saved room for the birthday cake!
  • 1 head cauliflower, trimmed and cut into florets
  • 1 Tbsp. butter
  • 3 Tbsp. breadcrumbs or cracker crumbs
  • ½ tsp. dried marjoram
  • ½ tsp. salt, divided
  • 1/8 tsp. black pepper

Cook cauliflower in pot of boiling salted water (use ¼ teaspoon salt) 6 minutes or until tender. Drain. Melt butter over medium heat in pot until lightly browned. Stir in breadcrumbs, marjoram, ¼ teaspoon salt and pepper. Scatter over cauliflower before serving.
