Balsamic Green Beans

This recipe from the 5 Ingredients for Healthy Living Cookbook is fancy version of plain old green beans.  As a Registered dietitian for the past 34 years, (I have loved every single year) I would bet I have read 1000 client’s food diaries. And, everyone’s favorite veggies are always beans and corn. If you are tired of the “same old, same old” green beans this recipe is bursting with flavor from the balsamic vinegar and honey combination. And, it takes only five minutes to prepare. Gotta love that!  This recipe is perfect for everyday and “fancy days.” It would be a great addition to your holiday table too.

Green Beans, olive, oil, onion, balsamic vinegar and honey
  • 1 lb fresh green beans, trimmed
  • 1 tsp. olive oil
  • 2 Tbsp. minced onion ( to save time you can use green onions)
  • 2 Tbsp. balsamic vinegar
  • 1 tsp. honey
  • 1/8 tsp. salt
  • 1/8 tsp. black pepper

Bring pot of water to a boil and cook green beans 4 minutes. Drain. Combine balsamic vinegar and honey in small bowl. Heat olive oil in large skillet over medium heat and sauté onion 1 minute. Add green beans, salt and pepper and vinegar mixture, stirring to combine. Cook until beans are tender. Adjust seasonings according to your own taste. (Our dad would dump on more salt!)

Makes four servings.
