3 Ingredient Sea Salt Chocolate Fudge

I crave chocolate and want to eat it every day. What I love more than chocolate is fudge. Laurie, my dietitian and I have been working on developing a healthy sugar free delicious fudge that we would not feel guilty eating. This is the easiest fudge ever. I mean EVER! Only 3 ingredients. Don’t forget the sea salt sprinkled on top. The savory of the sea salt married with the chocolate chips is a winning combination. So tasty I could dream about it.

Ingredients:
  • 1 cup chocolate chips (use dairy free if you need to, Enjoy Life is a good brand)
  • 1/3 cup full fat coconut milk ( Love Trader Joe’s brand)
  • ½ cup chopped walnuts (healthy fat)
Directions:

Line a muffin pan with liners and spray vegetable spray on the bottoms.

Place the chocolate chips in a 2 cup glass bowl. Melt the chocolate chips in the microwave. Be careful. Whisk in the coconut milk until blended. Stir in the chopped walnuts. Sprinkle sea salt on top of each. (I like lots.) Fill each muffin tin with about two tablespoons of chocolate. Makes about 7 to 8 servings.

Freeze about one hour or until firm. Store in freezer or your fridge. They may get too soft if you store on your counter.

I would recommend storing them in the freezer as they are out of sight and out of mind. Treat yourself when you need a break and want to indulge in some chocolate without the guilt.

I recommend using Ghirardelli or Guittard chocolate to create the richest chocolaty flavor.

  1. Sounds fantastic! My go to snack when I’m craving something chocolate:

    In a glass custard cup, place
    1 heaping tablespoon peanut butter
    10 or so chocolate chips (I agree with your brands)
    Melt in the microwave.
    Stir in 1 – 3 T raw oats.
    Eat with a little coffee spoon and enjoy every bite!
    WAY better than those “no-bake” cookies everyone makes!

      I have those little coffee spoons I use them for honey. I love savoring honey after dinner!

    Dark chocolate candies filled with sea salt caramel. Yum.

    1. Hi Dorry! It is great to have you back in MN.. I bet though at times it has been challenging. You are my role model..did you know that!
      Try 8 Doves with 1/4 cup whipping cream for a choc fondue..is really great!
